No matter how basic or sophisticated your converted campervan kitchen facilities, when you are away from home, the majority of people don’t want to slave for hours to create a great meal, and would rather be enjoying the time relaxing or doing some socialising or exploring. So here are a few campervan cooking ideas that should satisfy your needs as well as your tastebuds.
One Pan English Breakfast
No need to waste time chopping any of the wonderfully simple ingredients in this one pan wonder! Heat your grill to high and heat a medium non-stick frying pan. Add the 4 good quality chipolatas and fry for 3 mins. Then add 4 rashers of smoked back bacon, turning occasionally, until it starts to crisp, about 5 mins more. Tip in 140g of button mushrooms and continue to cook for a further 3-5 mins. Drain any excess fat and move the ingredients so they are evenly spread out. Season 6 beaten eggs, then add to the pan, swirling to fill the spaces. Gently move with a fork for 2 mins over a low-medium heat until beginning to set. Scatter over 8 halved cherry tomatoes, grated cheese, if you want, and some chives, then grill for 2 mins until set. Cut into wedges and serve with your favourite sauces.
Barbecue baked sweet potatoes
Virtually effort free if you’ve got a campfire burning…. grab a sweet potato per person, rub each one with a little oil and salt, then wrap in a double layer of foil. As soon as the barbecue coals are glowing red, plonk the potatoes directly on them and cook for 15 mins, turn with tongs, then cook for 15 mins more. Remove one, unwrap and check it is cooked through. Peel back the top of the foil from each potato, split open and top with a spoonful of greek yogurt and a few spring onion slices or another topping of your choice. Team with some grilled halloumi cheese or some bacon strips and you’re good to go.
